Ingredients
- 6 strips bacon, chopped (1g)
- 1 medium yellow onion, diced (10g)
- 2 cloves garlic, minced (2g)
- 2 (15 oz) cans navy or great northern beans, drained and rinsed (120g total, 15g per 1/2 cup serving)
- 1/2 cup tomato sauce, no sugar added (8g)
- 2 tbsp tomato paste (3g)
- 1/4 cup monk fruit brown-sugar blend like Lakanto Golden (0g)
- 2 tbsp apple cider vinegar (0g)
- 1 tbsp blackstrap molasses (15g โ for that signature flavor, just a tablespoon)
- 1 tbsp yellow mustard (1g)
- 1 tbsp Worcestershire sauce โ read label (1g)
- 1 tsp smoked paprika (1g)
- 1/2 tsp ground mustard (0g)
- 1/2 tsp kosher salt (0g)
- 1/2 cup water or unsalted chicken broth (1g)
Directions
- Preheat oven to 325ยฐF.
- In a Dutch oven or oven-safe skillet, cook bacon over medium heat until crispy, about 6 minutes. Remove half with a slotted spoon and reserve for topping.
- To the bacon fat, add onion. Cook 5 minutes until soft and translucent.
- Add garlic. Cook 30 seconds until fragrant.
- Add drained beans, tomato sauce, tomato paste, monk fruit brown-sugar, vinegar, molasses, mustard, Worcestershire, paprika, ground mustard, salt, and water/broth.
- Stir everything together. Bring to a simmer.
- Sprinkle reserved bacon over the top.
- Cover and transfer to oven. Bake 30 minutes covered.
- Uncover. Bake another 15 minutes until sauce is thick and glossy and beans look saucy, not soupy.
- Let rest 5 minutes before serving (they thicken more as they cool).
