  1. Preheat oven to 325ยฐF.
  2. In a Dutch oven or oven-safe skillet, cook bacon over medium heat until crispy, about 6 minutes. Remove half with a slotted spoon and reserve for topping.
  3. To the bacon fat, add onion. Cook 5 minutes until soft and translucent.
  4. Add garlic. Cook 30 seconds until fragrant.
  5. Add drained beans, tomato sauce, tomato paste, monk fruit brown-sugar, vinegar, molasses, mustard, Worcestershire, paprika, ground mustard, salt, and water/broth.
  6. Stir everything together. Bring to a simmer.
  7. Sprinkle reserved bacon over the top.
  8. Cover and transfer to oven. Bake 30 minutes covered.
  9. Uncover. Bake another 15 minutes until sauce is thick and glossy and beans look saucy, not soupy.
  10. Let rest 5 minutes before serving (they thicken more as they cool).
