๐ŸŒ Cultural note

Sticky-glazed BBQ chicken is the Friday-night-on-the-back-deck recipe โ€” the kind of meal where everybody licks their fingers and nobody talks for the first three minutes. We grill ours when it's warm and oven-bake in January with zero apology.

Ingredients

Directions

  1. Preheat oven to 425ยฐF (or fire up the grill to medium-high).
  2. Pat thighs dry, rub with olive oil.
  3. Mix paprika, garlic powder, salt, pepper, and onion powder. Season thighs all over, getting under the skin where you can.
  4. Arrange skin-side up on a foil-lined sheet pan (or a wire rack set in the pan for crispier skin).
  5. Bake 25 minutes โ€” they should look golden and the skin should be tightening.
  6. While they cook, whisk all glaze ingredients in a small saucepan over medium-low. Simmer 5 minutes until glossy. Taste and adjust sweetness.
  7. Pull thighs from the oven. Brush generously with glaze.
  8. Return to oven for 8-10 more minutes, until glaze is sticky and thighs hit 175ยฐF internal.
  9. Brush with a second coat of glaze right out of the oven for that magazine-cover shine.
  10. Rest 5 minutes before serving.
