Sticky-glazed BBQ chicken is the Friday-night-on-the-back-deck recipe โ the kind of meal where everybody licks their fingers and nobody talks for the first three minutes. We grill ours when it's warm and oven-bake in January with zero apology.
Why this recipe is T1D-friendly
- Chicken thighs are protein-and-fat heavy, which keeps blood sugar gentle and predictable through dinner.
- Our homemade BBQ glaze uses monk fruit + tomato paste instead of brown sugar and ketchup, dropping a normally 13-18g-per-2-tbsp sugar bomb down to 1-2g.
Ingredients
- 6 bone-in, skin-on chicken thighs, about 2.5 lb total (0g)
- 1 tbsp olive oil (0g)
- 1 tbsp smoked paprika (1g)
- 2 tsp garlic powder (1g)
- 2 tsp kosher salt (0g)
- 1 tsp black pepper (1g)
- 1 tsp onion powder (1g)
- Low-sugar BBQ glaze:
- 1/2 cup tomato paste (10g โ split across 6 servings)
- 1/4 cup apple cider vinegar (1g)
- 3 tbsp monk fruit sweetener like Lakanto Golden (0g)
- 2 tbsp Worcestershire sauce (2g โ read label)
- 1 tbsp yellow mustard (1g)
- 1 tsp smoked paprika (0g)
- 1/2 tsp liquid smoke, optional (0g)
- 2 tbsp water to loosen (0g)
Directions
- Preheat oven to 425ยฐF (or fire up the grill to medium-high).
- Pat thighs dry, rub with olive oil.
- Mix paprika, garlic powder, salt, pepper, and onion powder. Season thighs all over, getting under the skin where you can.
- Arrange skin-side up on a foil-lined sheet pan (or a wire rack set in the pan for crispier skin).
- Bake 25 minutes โ they should look golden and the skin should be tightening.
- While they cook, whisk all glaze ingredients in a small saucepan over medium-low. Simmer 5 minutes until glossy. Taste and adjust sweetness.
- Pull thighs from the oven. Brush generously with glaze.
- Return to oven for 8-10 more minutes, until glaze is sticky and thighs hit 175ยฐF internal.
- Brush with a second coat of glaze right out of the oven for that magazine-cover shine.
- Rest 5 minutes before serving.
