A backyard burger is the most American thing we make โ fourth of July, Memorial Day, "it's Tuesday and I don't feel like cooking" Tuesday. The smell of a beef patty hitting a hot griddle is built into childhood. We just rewrite the bun math so it stays fun.

Ingredients
- 1.5 lb 80/20 ground beef (0g)
- 1.5 tsp kosher salt (0g)
- 1 tsp black pepper (1g)
- 1 tsp garlic powder (1g)
- 1/2 tsp onion powder (1g)
- 1/2 tsp smoked paprika, optional (0g)
- 1 tbsp Worcestershire sauce โ read label for sugar (1g)
- 6 slices American or cheddar cheese (1g each)
- 1 tbsp neutral oil for the pan (0g)
- Iceberg or butter lettuce leaves for wrapping (1g for 2 leaves)
- Tomato slices (2g per slice)
- Dill pickle chips (0g)
Directions
- In a big bowl, gently mix beef with salt, pepper, garlic powder, onion powder, paprika, and Worcestershire. Mix just until combined โ overmixing makes dense, tough patties.
- Divide into 6 equal balls (about 4 oz / 113g each).
- Flatten each into a patty wider than your bun (they shrink), with a slight thumbprint dimple in the center to prevent doming.
- Heat a cast iron skillet or grill to high. You want it almost smoking.
- Add oil. Lay patties down and DO NOT move them for 3 minutes. This builds the crust.
- Flip once. Cook 2 minutes for medium, 3 for medium-well.
- Lay cheese on each patty in the last 60 seconds. Cover the pan with a lid (or a sheet pan) to melt.
- Rest patties 2 minutes on a plate before assembling โ locks in juices.
