  3. Flatten each into a patty wider than your bun (they shrink), with a slight thumbprint dimple in the center to prevent doming.
  4. Heat a cast iron skillet or grill to high. You want it almost smoking.
  5. Add oil. Lay patties down and DO NOT move them for 3 minutes. This builds the crust.
  6. Flip once. Cook 2 minutes for medium, 3 for medium-well.
  7. Lay cheese on each patty in the last 60 seconds. Cover the pan with a lid (or a sheet pan) to melt.
  8. Rest patties 2 minutes on a plate before assembling โ€” locks in juices.
