  1. Preheat oven to 375ยฐF. Grease a 12-cup mini-muffin tin or line with paper cups.
  2. In a big bowl, whisk almond flour, cornmeal, monk fruit, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk eggs, melted butter (cooled slightly so it doesn't cook the eggs), sour cream, almond milk, and vanilla.
  4. Pour wet into dry. Stir just until combined โ€” overmixing makes muffins dense.
  5. Fold in jalapeรฑo or cheddar if using.
  6. Divide batter among muffin cups, filling each about 3/4 full.
  7. Bake 12-15 minutes, until tops are golden and a toothpick comes out with just a few moist crumbs.
  8. Cool in the pan 5 minutes, then transfer to a rack.
  9. Serve warm with butter.
