Ingredients

- 3/4 cup roasted unsalted cashews (24g total / ~6g per serving)
- 3 cloves garlic, minced (1g)
- 1 tbsp fresh ginger, grated (1g)
- 3 tbsp tamari or low-sodium soy sauce (1g)
- 1 tbsp rice vinegar (0g)
- 1 tsp toasted sesame oil (0g)
- 1 tbsp coconut aminos (2g) โ adds sweetness without the sugar bomb
- A few drops monk fruit syrup (optional, 0g) โ for extra "takeout sweet" glaze
- 1 tsp cornstarch + 2 tbsp water (slurry) (3g total)

Directions
- Cook your rice of choice while the prep happens.
- Heat 1 tbsp oil in a large skillet or wok over medium-high. Add chicken in a single layer, sear 4-5 min until golden. Remove to a plate.
- Add remaining oil, bell pepper, and snap peas. Stir-fry 2-3 min until crisp-tender.
- Add garlic and ginger, stir 30 seconds until fragrant.
- Return chicken to pan. Pour in tamari, rice vinegar, sesame oil, and coconut aminos (and monk fruit if using). Toss to coat.
- Stir cornstarch slurry, pour into pan, and cook 1 min until sauce thickens and glazes the chicken.
- Fold in cashews. Taste โ add a splash more tamari if needed.
- Serve over a โ cup scoop of warm rice. Top with green onions.
