๐ Cultural note
Egg rolls are a Chinese-American mainstay โ but the wrapper is where most of the carbs hide (and the deep-fry oil isn't doing anyone's pancreas any favors). "Egg roll in a bowl" keeps the savory ginger-garlic-pork filling kids love, ditches the wrapper, and lands on the table in 20 minutes.
Why this recipe is T1D-friendly
- No wrapper = ~20g carbs dropped vs. two traditional egg rolls
- Cabbage is fiber-rich and slows the meal's overall absorption
- High protein from ground pork keeps kids fuller longer (fewer "I'm hungry again" snack-spikes)
- Sauce uses tamari + sesame, no thickener needed
Ingredients
- 1 lb ground pork (or ground chicken) (0g)
- 1 tbsp avocado oil (0g)
- 1 small onion, diced (8g total / ~2g per serving)
- 4 cloves garlic, minced (2g)
- 1 tbsp fresh ginger, grated (1g)
- 1 bag (14 oz) coleslaw mix or 6 cups shredded green cabbage + 1 shredded carrot (20g total / ~5g per serving)
- 3 tbsp tamari or low-sodium soy sauce (2g)
- 1 tbsp rice vinegar (0g)
- 1 tsp toasted sesame oil (0g)
- 1/4 tsp white pepper (0g)
- 2 green onions, sliced (1g)
- 1 tsp toasted sesame seeds (1g)
- Optional: drizzle of sriracha or chili crisp for grown-ups (0g)
Directions
- Heat oil in a large skillet or wok over medium-high. Add ground pork, break up with a spatula, and brown 5-6 min until no pink remains.
- Add onion, cook 2 min until softened.
- Stir in garlic and ginger, 30 seconds.
- Pile in coleslaw mix. It will look like too much โ it'll wilt down. Toss with tongs.
- Pour in tamari, rice vinegar, sesame oil, and white pepper. Toss to coat.
- Cook 4-5 min until cabbage is tender but still has a tiny bite.
- Top with green onions and sesame seeds. Serve in bowls.
Dash's kid tips ๐
- Tell kids it's "inside-out egg rolls" โ frames it as familiar takeout, not weird veggie bowl.
- Serve with chopsticks for older kids โ novelty makes the cabbage go down easier.
- For the "I don't like onions" crew: grate the onion instead of dicing so it disappears into the sauce.
