Despite the name, Mongolian beef is an American-Chinese invention โ sweet, garlicky strips of beef tossed with scallions. It became a P.F. Chang's-era staple and now lives in every kid's "favorites" list. We tame the sugar without losing the glossy magic.

- Restaurant Mongolian beef can hit 60g+ carbs per serving from brown-sugar-heavy sauce โ we use 1 tsp brown sugar total + allulose or monkfruit to mimic the caramel depth (keeps sauce carbs under 2g/serving)

Ingredients
- 1.25 lb flank or sirloin steak, sliced thin against the grain (0g)
- 2 tbsp cornstarch (for coating beef) (14g total / ~3.5g per serving)
- 3 tbsp avocado oil (0g)
- Sauce:
- 1/3 cup low-sodium tamari (3g)
- 1/3 cup water or low-sodium beef broth (0g)
- 1 tsp brown sugar (4g sugar / ~1g per serving)
- 2 tbsp allulose or 1 tbsp monkfruit syrup (for caramel depth without spike) (0-2g depending on brand)
- 5 cloves garlic, minced (2g)
- 1 tbsp fresh ginger, grated (1g)
- 1 tsp rice vinegar (0g)
- 1/4 tsp red pepper flakes (optional, omit for tiny mouths) (0g)
- 6 green onions, cut into 2-inch pieces (3g)
- Base (kid-default):
- 1โ cups cooked jasmine or basmati rice (โ cup per serving, ~15g each) โ see "Rice & base options" below for alternatives
Directions
- Toss sliced beef with cornstarch until lightly coated (don't soak โ just dust). Let sit 10 min.
- Heat 2 tbsp oil in a wok or large skillet over high heat. Add beef in a single layer, sear 1-2 min per side until crispy edges form. Work in batches if needed. Remove to a plate.
- Lower heat to medium. Add remaining 1 tbsp oil + garlic and ginger, stir 30 seconds.
- Pour in tamari, water/broth, brown sugar, allulose/monkfruit, rice vinegar, and pepper flakes. Simmer 2-3 min until syrupy.
- Return beef + juices. Toss to coat. Add green onions, toss 30 seconds (you want them still bright).
- Serve over a โ cup scoop of warm rice.

- Save the crispiest beef edges for the top of your kid's bowl โ those are the "treasure" pieces.
- Toddler version: skip pepper flakes, cut green onions tiny so they don't get picked out.
- Shirataki tip: dry-toast them in a skillet 3 min before saucing โ kills the funky smell and gives a better noodle bite.
