  1. Toss sliced beef with cornstarch until lightly coated (don't soak โ€” just dust). Let sit 10 min.
  2. Heat 2 tbsp oil in a wok or large skillet over high heat. Add beef in a single layer, sear 1-2 min per side until crispy edges form. Work in batches if needed. Remove to a plate.
  3. Lower heat to medium. Add remaining 1 tbsp oil + garlic and ginger, stir 30 seconds.
  4. Pour in tamari, water/broth, brown sugar, allulose/monkfruit, rice vinegar, and pepper flakes. Simmer 2-3 min until syrupy.
