Fried rice (炒饭, chǎo fàn) was born from leftovers — every Chinese household has its own version. American-Chinese fried rice is one of the first dishes Chinese-American kids learn to "cook" alongside their parents. We're using a real day-old rice base in a kid-friendly ⅓ cup portion so the dish still tastes and behaves like fried rice — not cauliflower mush.
Why this recipe is T1D-friendly
- Real day-old rice is the actual dish — we just measure the portion (⅓ cup cooked = 15g) instead of free-pouring
- The day-old rice has higher resistant starch than fresh, which is a tiny gentler bump on the curve
- Eggs + peas + a little ham/chicken bulks up protein for a balanced one-pan meal — the protein-fat combo around a small rice portion smooths the curve
- Sauce is tamari (1g per tbsp) + sesame oil + white pepper — zero added sugar, no MSG-and-sugar takeout combo
Ingredients
- 1⅓ cups cooked + COLD jasmine or brown rice (must be day-old or chilled) (~60g total / ~15g per ⅓ cup serving — see "Rice & base options" below)
- 3 tbsp avocado oil (divided) (0g)
- 3 large eggs, beaten (2g)
- 1/2 cup diced carrots (6g)
- 1/2 cup frozen peas (10g)
- 1/2 cup diced ham, cooked chicken, or shrimp (optional protein) (0g)
- 3 cloves garlic, minced (1g)
- 1 tsp fresh ginger, grated (0g)
- 3 tbsp tamari or low-sodium soy sauce (2g)
- 1 tsp toasted sesame oil (0g)
- 1/2 tsp white pepper (0g)
- 3 green onions, sliced (1g)
Directions
- Cook your rice the night before (any of the options above). Cold/dry rice = real fried rice texture.
- Heat 1 tbsp oil in a large skillet or wok over medium-high. Pour in beaten eggs, scramble lightly, and remove to a plate.
- Add 1 tbsp oil. Stir-fry carrots 2 min, then add peas and protein (if using), 1 min more.
- Push veggies to one side. Add remaining oil + garlic and ginger to the empty side, 30 seconds.
- Add cold cooked rice (or your alt-rice). Spread in a single layer and let it sit 1-2 min — you want some browned bits.
- Toss everything together. Pour tamari, sesame oil, and white pepper around the edges of the pan (not on top of the rice).
- Fold in scrambled eggs and green onions. Toss 1 min. Serve.
Dash's kid tips 🐆
- Day-old rice is non-negotiable for real-rice versions — fresh rice = mushy fried rice. Make rice the night before during cleanup.
- Let your kid crack the eggs (over a separate bowl, in case of shells). Cooking together = eating better.
- "Hidden veggie" version: pulse the carrots in a food processor before stir-frying so they disappear into the rice.
- For shrimp kids: rough-chop the shrimp so each bite has a little bit instead of a few "big scary" pieces.
