🌍 Cultural note

Fried rice (炒饭, chǎo fàn) was born from leftovers — every Chinese household has its own version. American-Chinese fried rice is one of the first dishes Chinese-American kids learn to "cook" alongside their parents. We're using a real day-old rice base in a kid-friendly ⅓ cup portion so the dish still tastes and behaves like fried rice — not cauliflower mush.

  1. Cook your rice the night before (any of the options above). Cold/dry rice = real fried rice texture.
  2. Heat 1 tbsp oil in a large skillet or wok over medium-high. Pour in beaten eggs, scramble lightly, and remove to a plate.
  3. Add 1 tbsp oil. Stir-fry carrots 2 min, then add peas and protein (if using), 1 min more.
  4. Push veggies to one side. Add remaining oil + garlic and ginger to the empty side, 30 seconds.
  5. Add cold cooked rice (or your alt-rice). Spread in a single layer and let it sit 1-2 min — you want some browned bits.
  6. Toss everything together. Pour tamari, sesame oil, and white pepper around the edges of the pan (not on top of the rice).
  7. Fold in scrambled eggs and green onions. Toss 1 min. Serve.
