Cordon Bleu literally means "blue ribbon" โ top honor โ and the dish lives up to the name. It's chicken stuffed with ham and Swiss cheese, breaded and pan-fried until golden. Traditional breading is panko (high carb), but almond flour breading gives you the same satisfying crunch with a fraction of the glucose impact. This is the recipe that wins over the pickiest kids โ fancy chicken nuggets, basically.

- 1/2 tsp garlic powder (0g)

- 4 tbsp butter (0g)

Bread / potato / base options
The chicken itself is ~7g per serving with almond flour. Side options:
- Roasted green beans (default, +4g = 11g total): Tossed in olive oil and garlic.

- Small mashed potato portion (+15g = 22g total): 1/3 cup classic potato mash.
- Side salad with Dijon vinaigrette (+3g = 10g total): Light, French bistro style.
- Panko breading instead of almond flour (+22g = 29g total): Traditional but biggest carb hit.
Directions
- Mise en place โ set up your breading station: one shallow bowl with beaten eggs whisked with Dijon, one shallow bowl with almond flour, parmesan, thyme, garlic powder, salt, and pepper.
- Butterfly the chicken: Place a chicken breast on a cutting board. Slice horizontally almost all the way through, then open like a book.
- Cover with plastic wrap and pound to about 1/4-inch thickness with a meat mallet or heavy pan. Don't tear holes.
- Season the pounded chicken lightly with salt and pepper on both sides.
- Stuff: Lay one slice of ham on the chicken, then one slice of cheese, leaving a 1/2-inch border.
- Roll the chicken up tightly from one short end, tucking in the sides as you go. Secure with toothpicks (3 per roll usually does it).
- Repeat with all 4 breasts.
- Bread each roll: Dip in egg mixture, then roll in almond flour mixture, pressing to coat well. Set aside.
- Preheat oven to 375ยฐF (190ยฐC).
- Heat butter and olive oil in a large oven-safe skillet over medium heat.
- Sear: Place rolls seam-side down first, cook 2-3 minutes until golden. Roll and brown all sides, about 8 minutes total.
- Finish in oven: Transfer skillet to oven, bake 15-18 minutes until internal temp is 165ยฐF (74ยฐC).
- Rest 5 minutes. Remove toothpicks. Slice into thick medallions to show the swirl.
- Optional pan sauce: While chicken rests, return skillet to medium heat. Add broth, scrape bits. Whisk in cream and Dijon. Simmer 2-3 minutes until thickened. Spoon over chicken.
- Top with parsley, serve with lemon wedges.

- Pound the chicken thin โ the thinner the breast, the easier it rolls and the faster it cooks evenly.
- Don't skip the toothpicks โ the cheese will leak out otherwise. Pull them BEFORE serving and count them so none get eaten.
- Freeze stuffed-but-unbreaded chicken rolls individually wrapped โ pull one out, bread, cook. Weeknight magic.
