Forget the fancy spiral from the Pixar movie โ real ratatouille is a rustic Provenรงal vegetable stew that grandmรจres in the South of France throw together on hot summer evenings. It's just chopped vegetables, olive oil, and herbs from the garden. That's it. The magic is in not rushing it.
Why this recipe is T1D-friendly

Ingredients
- 1 medium eggplant, diced (~12g total, ~2g per serving)
- 2 medium zucchini, diced (~12g total, ~2g per serving)
- 1 red bell pepper, diced (~7g, ~1g per serving)
- 1 yellow bell pepper, diced (~7g, ~1g per serving)
- 1 medium yellow onion, diced (~10g, ~2g per serving)
- 4 cloves garlic, minced (~4g, negligible)
- 1 can (28oz) crushed tomatoes (~40g total, ~7g per serving)
- 3 tbsp olive oil (0g)
- 1 tbsp fresh thyme (or 1 tsp dried) (0g)
- 1 tbsp fresh basil, chopped (0g)
- 1 bay leaf (0g)
- Salt + black pepper to taste (0g)
- Optional: 1/4 cup grated parmesan for topping (~1g)
Bread / potato / base options
Ratatouille is traditionally served with crusty baguette to mop up the sauce โ that's where the carbs sneak in. Options:
- No bread (default, ~14g): Serve in a bowl with a fried egg on top โ French farmhouse style.
- Cauliflower rice base (~16g): 1/2 cup steamed cauli rice under the ratatouille.
- Small baguette portion (~28g): One 1-inch slice of baguette = ~14g carbs on top of the ratatouille's 14g.
- Almond flour roll (~18g): Half a low-carb roll = ~4g extra carbs.
Directions
- Mise en place first โ dice all vegetables into roughly 1/2-inch cubes. French cooking is 80% prep, 20% cook. Get it all chopped before you turn on the stove.
- Heat 2 tbsp olive oil in a large Dutch oven or deep skillet over medium heat.
- Add onion and cook 4-5 minutes until soft and translucent.
- Add garlic, cook 30 seconds until fragrant โ don't let it brown.
- Add eggplant and remaining 1 tbsp olive oil (eggplant is a sponge). Cook 6-8 minutes until it starts to soften.
- Add bell peppers and zucchini. Stir, cook 5 more minutes.
- Pour in crushed tomatoes, add thyme, bay leaf, salt, and pepper. Stir gently.
- Reduce heat to low, cover, and simmer 25-30 minutes, stirring occasionally. Vegetables should be tender but not mushy.
- Remove bay leaf. Stir in fresh basil right before serving.
- Taste, adjust salt. Top with parmesan if using.

- Serve with a fried egg on top, runny yolk โ kids love breaking the yolk into the stew. Adds protein, zero extra carbs.
