  1. In a heavy pot, combine rinsed dal, water, turmeric, salt, and chopped tomato. Bring to a boil, reduce to a simmer, and cook uncovered for 25-30 minutes, stirring occasionally, until the lentils completely break down into a soft, creamy porridge. Add a splash more water if it gets too thick. Whisk briskly at the end to make it silky.
  2. While dal cooks, make the tadka. Heat ghee in a small skillet over medium heat. Add cumin and mustard seeds โ€” wait for them to crackle (about 30 seconds).
  3. Add hing, then onion. Cook 5-6 minutes until golden. Add garlic, ginger, and dried chilies. Cook 1 minute more.
  4. Turn off heat. Stir in Kashmiri chili powder and garam masala (they'll bloom in the residual heat without burning).
  5. Pour the entire sizzling tadka into the cooked dal. Stir. Taste for salt.
  6. Serve at the table: each plate gets its rice scoop first, then a ladle of dal. Top with cilantro and a squeeze of lemon.
