🌍 Cultural note

Saag (cooked greens) paneer is the Punjabi winter classic — mustard greens or spinach, slow-cooked with ginger, garlic, and ghee, studded with cubes of homemade paneer cheese. In Punjabi homes, saag is cooked in a big *patila* and served with hot makki di roti or basmati — everybody eats from the same pot. American kitchens almost always use spinach; we'll do the same. Below, the kid carb math is broken out so your T1D baby gets the same plate as everyone else.

Adults take their full plate (1 cup saag + ½ cup basmati). Saag is so low-carb that the rice is the only variable.

  1. Heat 1 tbsp ghee in a large Dutch oven over medium-high heat. Add paneer cubes and pan-fry 2-3 minutes per side until lightly golden. Transfer to a paper-towel-lined plate.
  2. In the same pot, add the remaining 2 tbsp ghee. Add onion and cook 7 minutes until soft and just starting to color.
  3. Add ginger, garlic, and green chili (if using). Cook 1 minute.
  4. Stir in cumin, coriander, turmeric, and salt. Add spinach in batches, letting each wilt before adding the next (if using frozen, just dump it in).
  5. Cook 6-8 minutes until spinach is very tender and most liquid evaporates.
  6. Use an immersion blender to pulse the spinach mixture to a coarse purée (or leave chunky if your kid likes texture). Keep it from going totally smooth — saag should have some bite.
  7. Return paneer to the pot. Stir in cream and garam masala. Simmer 2 minutes to warm through.
  8. Finish with a squeeze of lemon. Serve at the table; kid's plate first.
