  1. Boil potato cubes in salted water 6-8 minutes until just fork-tender. Drain. Add peas to the colander to thaw with the residual heat.
  2. Heat oil in a skillet over medium. Add cumin seeds โ€” let them sizzle 15 seconds.
  3. Add onion. Cook 5 minutes until soft. Add ginger, garlic, and green chili. Cook 1 minute.
  4. Stir in coriander, garam masala, turmeric, amchur, and salt. Cook 30 seconds.
  5. Add the cooked potato and peas. Smash gently with a fork โ€” you want a chunky, slightly mashed texture, not a smooth puree. Cook 2-3 minutes to dry out any extra moisture.
  6. Turn off heat. Stir in cilantro and lemon. Taste and adjust salt.
  7. Heat oven to 350ยฐF. Arrange phyllo cups on a baking sheet. Spoon about 1 tbsp filling into each cup, mounding slightly.
  8. Bake 8-10 minutes until cups are crisp and golden and filling is heated through.
  9. Serve 3 cups per kid plate, with a small dollop of cucumber-mint chutney.
