Traditional samosas are deep-fried pastries stuffed with spiced potato and peas โ a beloved Indian snack you'll find at every chai stall from Mumbai to Manhattan. The classic version is a carb-and-fry double whammy. Our cookbook version uses mini phyllo cups (you can buy them frozen!) for built-in portion control โ same flavor, way better numbers.
Why this recipe is T1D-friendly
- Pre-made mini phyllo cups = predictable, countable carbs (no guessing on hand-rolled wrappers)
- Kids can count their own portions, which builds T1D number-awareness in a fun way
- Filling is veggie-dense โ peas and potato are stretched, not piled
- Baked, not fried, so no surprise grease changing absorption
Ingredients
- 18 frozen mini phyllo cups (about 2 boxes โ Athens brand at most groceries) (~85g total โ 14g per 3-cup serving)
- 1 medium russet potato (about 6 oz), peeled and finely diced into ยผ-inch cubes (28g โ about 1.5g/serving cup contribution)
- ยฝ cup frozen peas (10g โ minimal per cup)
- 2 tbsp neutral oil or ghee (0g)
- 1 tsp cumin seeds (0g)
- 1 small yellow onion, very finely chopped (6g)
- 1 tbsp grated ginger (1g)
- 2 cloves garlic, minced (1g)
- 1 small green chili, finely minced (optional) (0g)
- 1 tsp ground coriander (0g)
- 1 tsp garam masala (0g)
- ยฝ tsp turmeric (0g)
- ยฝ tsp amchur (dried mango powder) โ or extra lemon (0g)
- 1 tsp salt
- 2 tbsp chopped fresh cilantro
- Squeeze of lemon
For dipping (optional, mostly free carbs)
- Cucumber-mint chutney (see Chicken Tikka Skewers recipe) OR plain tamarind dip (use sparingly โ tamarind has sugar)
Directions
- Boil potato cubes in salted water 6-8 minutes until just fork-tender. Drain. Add peas to the colander to thaw with the residual heat.
- Heat oil in a skillet over medium. Add cumin seeds โ let them sizzle 15 seconds.
- Add onion. Cook 5 minutes until soft. Add ginger, garlic, and green chili. Cook 1 minute.
- Stir in coriander, garam masala, turmeric, amchur, and salt. Cook 30 seconds.
- Add the cooked potato and peas. Smash gently with a fork โ you want a chunky, slightly mashed texture, not a smooth puree. Cook 2-3 minutes to dry out any extra moisture.
- Turn off heat. Stir in cilantro and lemon. Taste and adjust salt.
- Heat oven to 350ยฐF. Arrange phyllo cups on a baking sheet. Spoon about 1 tbsp filling into each cup, mounding slightly.
- Bake 8-10 minutes until cups are crisp and golden and filling is heated through.
- Serve 3 cups per kid plate, with a small dollop of cucumber-mint chutney.
