๐ŸŒ Cultural note

Chicken parm is the dish that made every Italian-American kid fall in love with mom's cooking โ€” that crispy cutlet under a blanket of bubbly mozzarella and tangy sugo. The almond-flour breading swap is honestly so close to the breadcrumb version that my non-T1D family doesn't even notice, and it cuts the carbs by a third.

Traditional breadcrumbs (โ…“ cup)~18g
Panko (โ…“ cup)~16g
Almond flour (ยผ cup)~3g

Directions

  1. Preheat oven to 425ยฐF.
  2. Pound chicken between two sheets of plastic wrap until ยฝ inch thick. Pat dry, season with salt + pepper.
  3. Set up breading station: beaten eggs in one shallow bowl; almond flour + parm + Italian seasoning + garlic powder + salt + pepper mixed in another.
  4. Dip each cutlet in egg, then press firmly into almond flour mix on both sides.
  5. Heat olive oil in a large oven-safe skillet over medium-high. Pan-fry cutlets 2-3 min per side until golden brown (they'll finish in the oven).
  6. Transfer cutlets to a baking dish (or leave in skillet if oven-safe).
  7. Spoon a few tablespoons of warm marinara over each cutlet โ€” don't drown them, the breading should still peek through.
  8. Top each with 2 slices fresh mozzarella.
  9. Bake 10-12 min until cheese is bubbly and slightly golden.
  10. Rest 3 min, then top with torn basil and serve.
