Directions
- Preheat oven to 425ยฐF.
- Pound chicken between two sheets of plastic wrap until ยฝ inch thick. Pat dry, season with salt + pepper.
- Set up breading station: beaten eggs in one shallow bowl; almond flour + parm + Italian seasoning + garlic powder + salt + pepper mixed in another.
- Dip each cutlet in egg, then press firmly into almond flour mix on both sides.
- Heat olive oil in a large oven-safe skillet over medium-high. Pan-fry cutlets 2-3 min per side until golden brown (they'll finish in the oven).
- Transfer cutlets to a baking dish (or leave in skillet if oven-safe).
