Piccata is the dish that proves Italian cooking doesn't need to be heavy to feel special โ buttery, lemony, briny with capers, with a pan sauce you'll want to drink with a spoon. This is what I make on Tuesday nights when I want Dash's plate to taste like a restaurant but his glucose to behave like a kid eating chicken nuggets.

Ingredients
- 4 boneless skinless chicken breasts, pounded to ยฝ inch thick (0g)
- ยผ cup almond flour OR ยผ cup all-purpose flour (3g for almond / 24g for AP โ total)
- ยฝ tsp salt, ยผ tsp pepper, ยผ tsp garlic powder (1g)
- 3 tbsp olive oil (0g)
- 3 tbsp salted butter, divided (0g)
- 3 cloves garlic, thinly sliced (3g)
- ยฝ cup dry white wine (1g) โ or sub more chicken broth
- 1 cup chicken broth (2g)
- Juice of 1ยฝ lemons (~3 tbsp) (4g)
- 3 tbsp capers, drained (1g)
- ยผ cup chopped fresh parsley (1g)
- Lemon slices for garnish

Directions
- Pound chicken between plastic wrap to ยฝ inch thick. Pat dry.
- Mix almond flour, salt, pepper, garlic powder on a plate. Dredge each cutlet, shaking off excess.
- Heat olive oil + 1 tbsp butter in a large skillet over medium-high until shimmering.
- Cook cutlets 3-4 min per side until golden and cooked through (160ยฐF internal). Work in batches โ don't crowd the pan.
- Transfer chicken to a plate, tent with foil.
- Reduce heat to medium. Add sliced garlic to the same pan, cook 30 sec until fragrant.
- Pour in white wine, scrape up all the browned bits from the bottom. Reduce by half, about 2 min.
- Add chicken broth + lemon juice. Simmer 3-4 min until slightly thickened.
- Off heat, swirl in remaining 2 tbsp butter + capers. Sauce should look silky.
- Return chicken to pan, spoon sauce over. Top with parsley + lemon slices.
Dash's kid tips ๐
- Skip the capers on kid plates if salt-burst isn't his thing โ they're easy to leave off
- "Lemon chicken" is what we call it at our table โ sounds more kid-friendly than "piccata"
- The sauce is so good Dash will dunk anything in it โ keep zoodles or steamed broccoli nearby
