Directions

  1. Pound chicken between plastic wrap to ยฝ inch thick. Pat dry.
  2. Mix almond flour, salt, pepper, garlic powder on a plate. Dredge each cutlet, shaking off excess.
  3. Heat olive oil + 1 tbsp butter in a large skillet over medium-high until shimmering.
  4. Cook cutlets 3-4 min per side until golden and cooked through (160ยฐF internal). Work in batches โ€” don't crowd the pan.
  5. Transfer chicken to a plate, tent with foil.
  6. Reduce heat to medium. Add sliced garlic to the same pan, cook 30 sec until fragrant.
  7. Pour in white wine, scrape up all the browned bits from the bottom. Reduce by half, about 2 min.
  8. Add chicken broth + lemon juice. Simmer 3-4 min until slightly thickened.
  9. Off heat, swirl in remaining 2 tbsp butter + capers. Sauce should look silky.
  10. Return chicken to pan, spoon sauce over. Top with parsley + lemon slices.
