Melanzane alla parmigiana is one of those dishes where every nonna swears HER version is the right one โ fried vs baked, breaded vs not, with basil between the layers vs without. This is my mom-to-mom version: baked (less oil = steadier glucose) with an almond-flour breading that still gets that golden crust. Even kids who "don't like eggplant" devour this because it tastes like chicken parm's cozy cousin.

Ingredients
- 2 large eggplants, sliced into ยฝ-inch rounds (30g total / 5g per serving)
- 2 tsp salt, for sweating (0g)
- 1 cup almond flour (12g total / 2g per serving)
- ยฝ cup grated parmigiano (2g)
- 1 tsp Italian seasoning, ยฝ tsp garlic powder (2g)
- 2 large eggs, beaten (1g)
- 3 tbsp olive oil (0g)
- 2ยฝ cups homemade marinara or Rao's no-sugar-added (20g total / ~3g per serving)
- 12 oz fresh mozzarella, sliced (6g total / 1g per serving)
- ยผ cup fresh basil leaves
- Extra parm for finishing
Directions
- Slice eggplants, lay rounds on a sheet pan, salt generously on both sides. Let sweat 30 min โ this pulls out bitterness and excess water. Pat very dry.
- Preheat oven to 425ยฐF. Line two sheet pans with parchment.
- Set up breading: beaten eggs in one bowl; almond flour + parm + Italian seasoning + garlic powder + pinch salt mixed in another.
- Dip each eggplant round in egg, press into almond flour mix on both sides.
- Arrange in a single layer on sheet pans. Drizzle with olive oil.
- Bake 20 min, flipping once halfway, until golden and tender.
- Reduce oven to 375ยฐF. Spread ยฝ cup marinara in bottom of a 9x13 dish.
- Layer: half the eggplant, ยฝ cup marinara, half the mozzarella, half the basil. Repeat.
- Top with remaining marinara, mozzarella, a generous shower of parm.
- Bake 20-25 min until bubbly and golden. Rest 10 min before serving.
