Low-Carb Lasagna (Family Casserole)

Lasagna is *the* dish โ the one that means a holiday, a birthday, "your cousins are coming over." Nobody bakes a single portion of lasagna. Nonna's lasagna with the wide flat noodles and the meaty *sugo* and the ricotta layer with the egg whipped in is meant to be a full 9x13 pan, baked, rested, sliced at the table. We're keeping ALL of that. The zucchini noodles are not a sad substitute โ they're a brilliant swap that actually lets the meat and cheese shine. Below, the kid carb math is broken out per slice so your T1D baby gets the Sunday-dinner slice, dosed right.

From this 9x13 pan, build your child's plate. Carbs per slice depend on noodle choice:

Ingredients
Meat *sugo*
- 1ยฝ lb ground beef 85/15
- ยพ lb Italian sausage, casings removed
- 1 small yellow onion, diced
- 4 cloves garlic, minced
- 4 cups homemade marinara (see Quick Homemade Marinara) or Rao's no-sugar-added
- 1ยฝ tsp Italian seasoning, salt, pepper
Ricotta layer
- 20 oz whole-milk ricotta
- 2 large eggs
- ยพ cup grated parmigiano
- โ cup chopped fresh parsley + basil
- ยฝ tsp salt, pinch nutmeg
Noodles + topping
- 4 large zucchini, sliced lengthwise into โ -inch planks โ OR 1 box Banza lasagna sheets
- 20 oz fresh mozzarella, sliced or shredded
Directions
- If using zucchini: slice into planks, salt generously, lay on paper towels for 20 min to release water. Pat very dry. This step is non-negotiable โ wet zucchini = soup lasagna.
- Preheat oven to 375ยฐF.
- Brown beef + sausage in a large skillet over medium-high, breaking it up. Drain excess fat.
- Add onion, cook 4 min until soft. Add garlic, cook 1 min.
- Pour in marinara, Italian seasoning, salt, pepper. Simmer 10 min while you build the ricotta layer.
- In a bowl, mix ricotta, eggs, parmigiano, herbs, salt, nutmeg until smooth.
- In a 9x13 baking dish: spread ยฝ cup meat sauce on bottom. Layer zucchini planks (or Banza sheets). Spread โ ricotta. Sprinkle โ mozzarella. Spoon โ remaining meat sauce.
- Repeat layers two more times, ending with mozzarella + a sprinkle of parm on top.
- Cover with foil, bake 40 min. Uncover, bake 15 more min until bubbly and golden.
- REST 20 min before slicing โ this is critical for clean squares and lets the temp settle for accurate dosing.

- Slice and freeze leftover individual portions wrapped in parchment + foil, labeled with carb count. Lasagna is the GOAT of T1D batch-freeze meals โ pull a labeled square out, reheat 25 min at 350ยฐF, you have dinner ready with the dose pre-calculated. Make a triple-batch on a Sunday and you have lasagna nights every other week for a month.
- Build a "mini Dash lasagna" in a ramekin so they have their own portion โ kids love personal-sized
- Hide the zucchini swap by layering it well โ most kids genuinely can't tell once it's baked under the meat sauce
