Sausage and peppers is the smell of every Italian-American street festival โ San Gennaro in Little Italy, the church bazaar in Jersey, my own grandpa's backyard grill on a Sunday. The peppers and onions caramelize down into something sweet without any sugar, and the *salsiccia* carries all the flavor. This is a one-pan family miracle โ a full sheet pan, everyone scoops their own. Below, the kid carb math is broken out.

Why this recipe is T1D-friendly
- Naturally low-carb โ sausage is essentially zero, peppers + onions add fiber-rich carbs
- One sheet pan = less stress at dinnertime when you're already mentally calculating
- Skip the hoagie roll for the kid version, or use a low-carb roll for ~6g vs 30g+
- Freezes well as a leftover meal
Ingredients
- 2 lb sweet Italian sausage links (or mix sweet + hot for grown-ups) โ salsiccia dolce is the kid pick
- 3 large bell peppers (1 red, 1 yellow, 1 orange), sliced into thick strips
- 1 large green bell pepper, sliced
- 2 large yellow onions, sliced into half-moons
- 5 cloves garlic, smashed
- 4 tbsp olive oil
- 1ยฝ tsp dried oregano
- 1ยฝ tsp Italian seasoning
- ยฝ tsp red pepper flakes (optional โ skip for kids)
- ยพ tsp salt, ยผ tsp black pepper
- 3 tbsp balsamic vinegar
- โ cup chopped fresh basil + parsley
- Optional bases: low-carb hoagie rolls, polenta, cauli mash
Directions
- Preheat oven to 425ยฐF. Line a large sheet pan with parchment.
- Slice peppers and onions into thick strips โ you want them substantial so they don't burn.
- Toss peppers, onions, garlic with 3 tbsp olive oil, oregano, Italian seasoning, salt, pepper, red pepper flakes on the sheet pan. Spread in a single layer.
- Nestle whole sausage links right on top of the veggies.
- Drizzle remaining 1 tbsp olive oil over sausages.
- Roast 28-32 min, flipping sausages once halfway, until sausages are browned and veggies are caramelized at the edges.
- Remove from oven. Drizzle balsamic vinegar over everything while it's hot โ it'll sizzle and reduce slightly.
- Slice sausages on the bias into thick pieces.
- Toss everything together gently on the sheet pan to coat in pan juices.
- Shower with basil + parsley. Serve hot โ kid's plate first, with whatever base is right that night.

- Freeze leftovers in single-serve containers โ sausage + peppers is a freezer hero. Pull a container out, microwave, lunch or dinner is done. Add fresh polenta or a low-carb roll on the day.
- Slice sausage into coins for little hands โ easier than wrestling a whole link
- Roast a sheet pan of peppers + onions WITHOUT sausage as a freezer side for future weeks
