Ingredients
Meatballs
- 1 lb ground beef 85/15 (0g)
- ยฝ cup almond flour or ยผ cup breadcrumbs (4g for almond / 22g for breadcrumb โ total)
- 1 large egg (0g)
- ยผ cup grated parmigiano (1g)
- 2 cloves garlic, minced (2g)
- ยผ cup fresh parsley, chopped (1g)
- 1 tsp salt, ยฝ tsp black pepper (0g)
- 1 tsp dried oregano (1g)
Sauce + base
- 3 cups homemade marinara (see Quick Sugo recipe) or Rao's no-sugar-added (~6g per ยฝ cup)
- 4 oz dry spaghetti (cooked โ ~1โ cups, will portion below)
- Fresh basil + extra parmigiano for serving

Default to โ cup real spaghetti (15g) for kid portion. Bulk the plate with an extra meatball or a side salad so it doesn't look skimpy.
Directions
- Preheat oven to 400ยฐF. Line a sheet pan with parchment.
- In a big bowl, gently mix ground beef, almond flour, egg, parm, garlic, parsley, salt, pepper, oregano. Don't overwork it โ nonna's rule: mix until just combined.
- Roll into 12 meatballs, about 1ยฝ inches each (3 per serving).
- Bake 18-20 min until browned and cooked through (160ยฐF internal).
- Meanwhile, bring a big pot of salted water to a boil. Cook spaghetti to al dente โ usually 1 min less than package says.
- Warm the marinara in a wide skillet over medium-low.
- Drain pasta, reserving ยฝ cup pasta water.
- Add baked meatballs to the sauce, gently spoon sauce over them. Simmer 5 min.
- Portion โ cup cooked pasta per kid plate (Dash-size), top with 3 meatballs + generous sauce.
- Finish with torn basil and a shower of parm. Mangia!
