Directions

  1. Make the tare: simmer soy, monk fruit, vinegar, water, ginger, and garlic in a small pot for 3 min. Stir in cornstarch slurry, cook 1 min until syrupy. Set aside.
  2. Thread skewers: alternate chicken cube, scallion segment, chicken cube, scallion, etc. โ€” 3-4 chicken pieces per skewer.
  3. Heat a grill pan or outdoor grill to medium-high. Lightly oil the grates.
  4. Grill skewers 3-4 min per side until chicken is cooked through (165ยฐF internal).
  5. Brush generously with tare during the last 1 min on each side.
  6. Brush one more time after pulling off the grill. Serve hot with extra tare in a dipper.
