Traditional ramen noodles are wheat-based and very high carb, but using shirataki (konjac yam noodles) gives you the slurpable bowl experience without the spike.

  1. Soft-boil the eggs first: bring water to a rolling boil. Lower eggs in gently. Cook exactly 6 min 30 sec. Transfer to ice water. Peel when cool. Halve right before serving.
  2. Cook real ramen noodles per package directions (usually 3-4 min). Drain, set aside.
  3. Prep shirataki properly: drain noodles in a colander and rinse under cold water for 60 full seconds. Boil in fresh water 2 min, drain. Then dry-toast in a hot pan for 3 min, stirring โ€” this removes the "konjac smell" and gives them ramen-noodle texture.
  4. Make the broth: in a large pot, heat sesame oil. Sautรฉ garlic and ginger for 30 sec. Pour in broth. Add soy sauce and bring to a simmer.
  5. Whisk in miso paste at the end โ€” don't boil miso, it kills the flavor.
  6. Slide in chicken slices. Poach 4-5 min until cooked through.
  7. Add mushrooms and spinach. Cook 1 min until spinach wilts.
  8. Divide noodles (real + shirataki blend, or your choice) among 4 bowls. Ladle broth + chicken + veg on top.
  9. Add a halved egg, scallions, and nori strips to each bowl.
