๐ Cultural note
Ramen came to Japan from Chinese immigrants in the early 1900s and exploded into a national obsession โ every region has its own style, from Sapporo miso to Hakata tonkotsu. Traditional ramen noodles are wheat-based and very high carb, but using shirataki (konjac yam noodles) gives you the slurpable bowl experience without the spike.
Why this recipe is T1D-friendly
- Default uses a half-and-half blend of real ramen noodles + shirataki โ kids get the slurp, you get the lower carb math
- Soft-boiled egg adds protein and fat to flatten the curve
- Low-sodium broth gives you control over salt (regular ramen packet seasonings are brutal โ 1500mg+ sodium and often hidden sugar)
- Broth base is tamari + miso + ginger + sesame oil โ keeps sauce carbs under 4g per bowl
Ingredients
- 4 oz dry real ramen noodles (~22g per serving) + 1 package (8 oz) shirataki, rinsed well (half-and-half blend โ see "Noodle & base options" below)
- 1 lb boneless skinless chicken breast, sliced thin (0g)
- 6 cups low-sodium chicken broth (4g total)
- 2 tbsp low-sodium soy sauce (1g)
- 1 tbsp white miso paste (2g)
- 1 tbsp grated ginger (1g)
- 2 garlic cloves, minced (2g)
- 1 tsp toasted sesame oil (0g)
- 4 large eggs (4g total)
- 2 cups baby spinach (2g total)
- 1 cup sliced shiitake mushrooms (4g total)
- 4 scallions, sliced (2g total)
- 1 sheet nori, cut in strips (1g total)
- Optional: chili crisp for grown-ups (1g per tsp)
Directions
- Soft-boil the eggs first: bring water to a rolling boil. Lower eggs in gently. Cook exactly 6 min 30 sec. Transfer to ice water. Peel when cool. Halve right before serving.
- Cook real ramen noodles per package directions (usually 3-4 min). Drain, set aside.
- Prep shirataki properly: drain noodles in a colander and rinse under cold water for 60 full seconds. Boil in fresh water 2 min, drain. Then dry-toast in a hot pan for 3 min, stirring โ this removes the "konjac smell" and gives them ramen-noodle texture.
- Make the broth: in a large pot, heat sesame oil. Sautรฉ garlic and ginger for 30 sec. Pour in broth. Add soy sauce and bring to a simmer.
- Whisk in miso paste at the end โ don't boil miso, it kills the flavor.
- Slide in chicken slices. Poach 4-5 min until cooked through.
- Add mushrooms and spinach. Cook 1 min until spinach wilts.
- Divide noodles (real + shirataki blend, or your choice) among 4 bowls. Ladle broth + chicken + veg on top.
- Add a halved egg, scallions, and nori strips to each bowl.

- Cut the chicken into "fun shapes" with a tiny cookie cutter if they're a "no chunks" kid
