  1. Whisk eggs, dashi, soy sauce, monk fruit, and salt in a bowl until smooth. Don't overbeat โ€” you want layers, not foam.
  2. Heat a small nonstick pan (8-inch is ideal; tamago pans are rectangular but any small pan works) over medium-low. Brush with a thin layer of oil.
  3. Pour about 1/3 of the egg mix into the pan. Tilt to coat the bottom. Pop any bubbles with chopsticks.
  4. When the surface is just set but still wet, roll the egg from the far side of the pan toward you, forming a small log at the near edge.
  5. Push the log back to the far side. Brush the empty space with oil.
  6. Pour another 1/3 of the egg mix, lifting the existing log so the new egg flows underneath.
  7. When set, roll again โ€” the existing log becomes the core of a bigger roll.
  8. Repeat with the final third. You'll end up with a fat layered log.
  9. Slide onto a cutting board. Let rest 1 min, then slice into 1-inch pieces. Each slice shows beautiful spiral layers.
