🌍 Cultural note
Bibimbap (비빔밥) literally means "mixed rice" — a colorful bowl of veggies, protein, and a sunny egg on top. It's the Korean lunch of champions. The dish is literally named "mixed rice" — we keep real rice as the base, measured at ⅓ cup, and let the protein, veggies, and egg do the rest of the work.

Ingredients
Base (kid-default)
- 1⅓ cups cooked short-grain or sushi rice (⅓ cup per serving, ~15g per serving — see "Rice & base options" below for alternatives)
- 1 tsp toasted sesame oil (0g)
Beef (or sub leftover bulgogi/galbi)
- 1 lb ground beef or thin-sliced ribeye (0g)
- 2 tbsp low-sodium soy sauce (1g)
- 1 tsp sesame oil (0g)
- 2 cloves garlic, minced (1g)
- 1 tsp grated ginger (0g)
- 1 tsp maple syrup (4g total, 1g per serving)
Veggie toppings (each goes in its own little pile)
- 1 cup baby spinach, wilted with garlic (2g per serving)
- 1 large carrot, julienned and lightly sautéed (6g total, 1.5g per serving)
- 1 cup sliced mushrooms, sautéed (2g per serving)
- 1 small cucumber, thinly sliced (2g per serving)
Top
- 4 eggs, sunny-side up (0g)
- Sesame seeds + sliced scallions
- Optional: 1 tsp gochujang per bowl (3g) — use sparingly for kid bowls
Directions
- Cook the rice (or your chosen base) per package; toss warm rice with a tsp of sesame oil and pinch of salt.
- Mix beef with soy, sesame oil, garlic, ginger, and maple. Brown in a hot skillet 5-6 min. Set aside.
- In the same skillet, quickly wilt spinach with a clove of garlic, 1 min. Set aside. Sauté carrots 2 min. Set aside. Sauté mushrooms 4 min until golden.
- Fry eggs sunny-side up in a little sesame oil — crispy edges, runny yolk.
- Build bowls: ⅓ cup rice base, then arrange beef + each veggie in separate little piles around the edge. Top with egg, sesame seeds, scallions.
- Tell the kiddos: stir it all together before eating — that's the bibim! (mix mix mix)
