🌍 Cultural note

Bibimbap (비빔밥) literally means "mixed rice" — a colorful bowl of veggies, protein, and a sunny egg on top. It's the Korean lunch of champions. The dish is literally named "mixed rice" — we keep real rice as the base, measured at ⅓ cup, and let the protein, veggies, and egg do the rest of the work.

Why this recipe is T1D-friendly

Ingredients

Base (kid-default)

Beef (or sub leftover bulgogi/galbi)

Veggie toppings (each goes in its own little pile)

Top

Directions

  1. Cook the rice (or your chosen base) per package; toss warm rice with a tsp of sesame oil and pinch of salt.
  2. Mix beef with soy, sesame oil, garlic, ginger, and maple. Brown in a hot skillet 5-6 min. Set aside.
  3. In the same skillet, quickly wilt spinach with a clove of garlic, 1 min. Set aside. Sauté carrots 2 min. Set aside. Sauté mushrooms 4 min until golden.
  4. Fry eggs sunny-side up in a little sesame oil — crispy edges, runny yolk.
  5. Build bowls: ⅓ cup rice base, then arrange beef + each veggie in separate little piles around the edge. Top with egg, sesame seeds, scallions.
  6. Tell the kiddos: stir it all together before eating — that's the bibim! (mix mix mix)
