🌍 Cultural note

Kimchi bokkeumbap (김치볶음밥) is the Korean answer to "what should I do with these leftovers?" — punchy, comforting, and topped with a runny egg. We default to real day-old short-grain rice in a measured ⅓ cup, because fried rice is supposed to taste like fried rice. Milder, longer-fermented kimchi keeps it kid-friendly.

  1. Cook your rice the night before. Cold/dry rice = real fried rice texture.
  2. Heat 1 tbsp sesame oil in a large skillet over medium-high.
  3. Add onion; cook 3 min until soft. Add garlic; cook 30 seconds.
  4. Add kimchi and kimchi juice. Stir-fry 3 min until edges caramelize — this is the flavor base.
  5. Add cold rice (or your alt-rice). Stir-fry 4 min, pressing rice down to get some browned bits.
  6. Add protein, tamari, and gochujang (if using). Toss to coat. Cook 2 more min.
  7. Drizzle with remaining 1 tbsp sesame oil. Off heat.
  8. In a separate pan, fry eggs sunny-side up in a little oil.
  9. Spoon fried rice into bowls. Top each with an egg. Shower with scallions, crumbled seaweed, and sesame seeds.
