  1. Preheat oven to 350ยฐF. Arrange phyllo shells on a parchment-lined sheet pan.
  2. Squeeze the spinach until you think it's dry, then squeeze again. Seriously. Soggy filling = sad cups.
  3. In a bowl, combine spinach, feta, parmesan, eggs, Greek yogurt, green onions, garlic, dill, olive oil, nutmeg, salt, and pepper.
  4. Spoon filling into each shell โ€” heaping teaspoon, mounded slightly.
  5. Bake 12-15 minutes until filling is set and cups are golden.
  6. Cool 5 minutes (filling is lava-hot fresh from the oven).
  7. Serve with lemon wedges for squeezing.
