๐ Cultural note
In Greece, yogurt is so thick you can stand a spoon in it โ and it gets drizzled with honey and topped with walnuts for breakfast. We're using berries instead of honey for a lower-carb spin, but the spirit is the same: simple, real, beautiful.
Why this recipe is T1D-friendly
- Full-fat Greek yogurt is naturally low-carb (~6g per cup!) with ~18g protein per serving
- Berries are the lowest-carb fruits, plus loaded with fiber
- No added sugar โ sweetness comes from fruit and a tiny touch of vanilla
- Great breakfast option (protein-forward = less morning spike) or post-activity snack
Ingredients
- 1.5 cups plain whole-milk Greek yogurt (12g total)
- 1/2 cup mixed berries: blueberries, raspberries, sliced strawberries (8g total)
- 2 tbsp chopped walnuts or sliced almonds (2g total)
- 2 tbsp granola, low-sugar (like Purely Elizabeth) (10g total โ split between 2)
- 1/2 tsp vanilla extract (0g)
- Pinch of cinnamon (0g)
- Optional: 1 tsp honey, drizzled (3g per tsp โ split if using)
- Fresh mint leaf for garnish (0g)
Directions
- Stir vanilla and cinnamon into the Greek yogurt.
- In two small glasses or mason jars, layer: 1/4 cup yogurt, a spoonful of berries, a pinch of nuts.
- Repeat: another 1/4 cup yogurt, more berries, more nuts.
- Top with 1 tbsp granola per jar (this is the carb-counted layer โ measure it!).
- Finish with one bright berry and a mint leaf on top.
- Eat immediately, or seal and stash in the fridge for up to 24 hours (granola goes on right before eating to stay crunchy).

- Dash's tip: let kids build their own layers in a clear glass. Engineering breakfast = eating breakfast.
- Skip the granola entirely for a sub-10g carb snack. Add extra walnuts for crunch.
- Frozen berries work great and act like little ice cubes โ fun texture for hot days.
