- 4 oz mild cheese cubes (mozzarella, mild cheddar, or Halloumi) (2g total)
- 1 English cucumber, cut into spears (6g total)
- 2 large carrots, cut into sticks (12g total)
- 1 red bell pepper, sliced (6g total)
- 1 cup cherry tomatoes (8g total)
- 1/2 cup kalamata olives (3g total)
- 2 tbsp good olive oil (for drizzling) (0g)
- Sprinkle of sumac or smoked paprika (0g)
- Fresh parsley, chopped (0g)
- Lemon wedges
Directions
- Spread hummus across the bottom of 4 shallow bowls in a thick swoosh โ back of a spoon makes a pretty divot.
- Drizzle olive oil generously into the swoosh well. Sprinkle with sumac or paprika and chopped parsley.
- Toast pita points in a 375ยฐF oven for 4-5 minutes until crisp โ or skip and serve soft.
- Arrange around the hummus: 3 pita points per bowl (1/2 a mini pita), cheese cubes, cucumber spears, carrot sticks, bell pepper, tomatoes, olives.
- Tuck a lemon wedge on the side.
- Serve immediately โ half the joy is dipping.
