  1. Soak wooden skewers in water 20 min if using.
  2. Combine beef, lamb, parsley, grated onion, garlic, cumin, allspice, cinnamon, salt, and pepper. Mix with your hands until just combined โ€” overmixing makes it tough.
  3. Divide into 8 portions. Shape each around a skewer in a long sausage, or form into 3 small meatballs per skewer.
  4. Chill 10 minutes โ€” this helps them hold shape on the grill.
  5. Meanwhile, toss cucumbers, tomatoes, red onion with olive oil, lemon juice, sumac, salt, and pepper.
  6. Heat grill, grill pan, or cast iron to medium-high. Cook skewers 3-4 minutes per side, turning to brown all sides (10-12 min total). Internal temp 160ยฐF.
  7. Let rest 3 minutes โ€” the juices need a minute.
