  2. Cook pasta in salted water 1 minute LESS than package instructions (it'll finish in the oven). Drain.
  3. Toss hot pasta with pesto, garlic, 1 tbsp olive oil, and a pinch of salt.
  4. Let cool 5 minutes (so the egg doesn't scramble). Then stir in beaten egg, 1/2 cup mozzarella, parmesan, and chicken.
  5. Scoop heaping spoonfuls into each muffin cup, pressing down lightly. Top with remaining mozzarella and a tomato half on each.
  6. Bake 15-18 minutes until tops are golden and edges crispy.
