  1. Place chicken, water, onion, garlic, bay leaves, and salt in a large pot. Bring to a gentle boil, then reduce to a simmer.
  2. Skim foam off the top for the first 10 minutes. Simmer 25 minutes until chicken is tender.
  3. Remove chicken to a plate; let cool 5 min then shred meat off the bones and return to pot.
  4. Add carrots and rice. Simmer 10 min.
  5. Add chayote, zucchini, and corn. Simmer 8-10 more min until everything is fork-tender.
  6. Taste and adjust salt. Stir in cilantro.
  7. Ladle into bowls at the table โ€” kid's bowl first, with the right scoop of rice and veg. Finish with a big lime squeeze and avocado slices.
