๐ Cultural note
Fajitas started as cowboy food on the Texas-Mexico border โ vaqueros grilling skirt steak over an open fire after a long day. This sheet-pan version skips the drama but keeps the sizzle, perfect for weeknights when you're checking BG and homework at the same time.
Why this recipe is T1D-friendly
- Peppers and onions are low-carb and packed with fiber that slows glucose absorption
- Lean chicken breast keeps fat balanced so insulin timing stays predictable
- Easy to portion: count tortillas, not chicken (chicken is essentially zero carb)
Ingredients
- 1.5 lb boneless skinless chicken breast, sliced into strips (0g)
- 1 red bell pepper, sliced (6g)
- 1 yellow bell pepper, sliced (6g)
- 1 green bell pepper, sliced (4g)
- 1 large yellow onion, sliced (10g, divided across 4 servings)
- 3 tbsp olive oil (0g)
- 1.5 tsp chili powder (1g)
- 1 tsp ground cumin (0g)
- 1 tsp smoked paprika (0g)
- 1/2 tsp garlic powder (0g)
- 1/2 tsp salt (0g)
- Juice of 1 lime (1g)
- 4 small low-carb tortillas, like Mission Carb Balance (8g each)
- Optional toppings: sour cream (1g), shredded cheese (0g), guacamole (3g per 2 tbsp)
Directions
- Preheat oven to 425ยฐF. Line a sheet pan with parchment.
- Toss chicken, peppers, and onion with olive oil, all spices, salt, and lime juice directly on the pan.
- Spread in a single layer โ crowding = steam, space = caramelization.
- Roast 18-22 minutes, tossing once halfway, until chicken hits 165ยฐF and peppers are charred at the edges.
- Warm tortillas in a dry skillet 20 seconds per side.
- Serve family-style: tortillas, sheet-pan fajitas, and toppings in the middle.
Dash's kid tips ๐
- Dash's trick: let kids pick their pepper color โ they're way more likely to eat what they chose
- For picky eaters, skip the tortilla and serve as a "fajita bowl" over a โ cup scoop of real white rice โ see "Rice & base options" below
- Make a "mild zone" by removing some chicken before adding the chili powder
