Baba ganoush translates roughly to "pampered papa" โ a smoky, silky eggplant dip that's the slightly grown-up cousin of hummus. In Lebanese homes the eggplant is usually charred over an open flame for that signature smokiness; in our kitchens, broiling does the job beautifully. It's the dip that wins over kids who say they "don't like eggplant."

Ingredients
- 2 large eggplants (~2 lbs total) (20g โ ~3g per serving)
- 3 tbsp tahini (6g โ ~1g per serving)
- 2 tbsp olive oil + more for drizzling (0g)
- 2 cloves garlic, minced (1g)
- 1 lemon, juiced (~3 tbsp) (4g)
- ยฝ tsp ground cumin (0g)
- ยฝ tsp smoked paprika (0g)
- 1 tsp salt
- 2 tbsp fresh parsley, chopped (0g)
- 1 tbsp pomegranate seeds for garnish (optional, ~1g)
- Pinch of Aleppo pepper or sumac (optional)
Directions
- Heat oven to 450ยฐF (or broil on high for faster char).
- Prick eggplants all over with a fork โ important, or they explode.
- Place eggplants directly on a foil-lined sheet pan and roast 35-40 min, turning once, until skin is blackened and inside is collapsed and soft. (For real smokiness, char over a gas burner first 5 min, then finish in oven 20 min.)
- Let eggplants cool until you can handle them, about 10 min.
- Slice open and scoop the flesh into a strainer. Let drain 5 min โ this removes bitter water and prevents a runny dip.
- Transfer flesh to a bowl. Mash with a fork (don't use a food processor โ keeps the texture rustic and authentic).
- Stir in tahini, olive oil, garlic, lemon juice, cumin, paprika, and salt. Taste and adjust.
- Spread into a shallow bowl, swirl with the back of a spoon, drizzle with olive oil, scatter parsley and pomegranate seeds, and dust with Aleppo pepper.

- If your kid is suspicious of "smoky," skip the open-flame char and just roast โ milder and sweeter
