  2. Prick eggplants all over with a fork โ€” important, or they explode.
  3. Place eggplants directly on a foil-lined sheet pan and roast 35-40 min, turning once, until skin is blackened and inside is collapsed and soft. (For real smokiness, char over a gas burner first 5 min, then finish in oven 20 min.)
  4. Let eggplants cool until you can handle them, about 10 min.
  5. Slice open and scoop the flesh into a strainer. Let drain 5 min โ€” this removes bitter water and prevents a runny dip.
  6. Transfer flesh to a bowl. Mash with a fork (don't use a food processor โ€” keeps the texture rustic and authentic).
