Shawarma started as spit-roasted meat shaved off vertical rotisseries in Lebanon and Syria โ a Friday night street-food favorite that families now make at home with sheet pans. Turning it into a bowl lets each kid build their own plate, which is how Levantine families eat anyway: lots of little things, everyone picks.

Ingredients
- 1.5 lbs boneless skinless chicken thighs (0g)
- 3 tbsp olive oil (0g)
- 2 tsp ground cumin (1g)
- 2 tsp smoked paprika (1g)
- 1 tsp ground coriander (0g)
- 1 tsp turmeric (1g)
- ยฝ tsp cinnamon (0g)
- 4 cloves garlic, minced (2g)
- 1 lemon, juiced (4g)
- ยฝ cup hummus (12g total โ ~3g per serving)
- ยฝ cup tzatziki (yogurt + cucumber + garlic + dill) (8g total โ ~2g per serving)
- 2 cups chopped romaine (2g)
- 1 cup cherry tomatoes, halved (6g)
- 1 cucumber, diced (4g)
- 2 small pitas, halved (~48g total โ 12g per ยฝ pita)
- Salt + pepper
Directions
- In a big bowl, whisk olive oil, cumin, paprika, coriander, turmeric, cinnamon, garlic, lemon juice, and salt + pepper.
- Add chicken thighs, toss to coat, marinate at least 15 min (overnight is best).
- Heat oven to 425ยฐF. Line a sheet pan with parchment.
- Spread chicken in single layer, roast 20-25 min until edges crisp and internal temp hits 165ยฐF.
- While chicken roasts, chop romaine, tomatoes, and cucumber. Warm pitas in the oven last 2 min.
- Slice chicken into thin strips (like shawarma off the spit).
- Build bowls: greens base, sliced chicken, dollop of hummus, dollop of tzatziki, scattered tomatoes and cucumber.
- Serve pita halves on the side OR skip them and use big romaine leaves as wraps.
