  1. In a big bowl, whisk olive oil, cumin, paprika, coriander, turmeric, cinnamon, garlic, lemon juice, and salt + pepper.
  2. Add chicken thighs, toss to coat, marinate at least 15 min (overnight is best).
  3. Heat oven to 425ยฐF. Line a sheet pan with parchment.
  4. Spread chicken in single layer, roast 20-25 min until edges crisp and internal temp hits 165ยฐF.
  5. While chicken roasts, chop romaine, tomatoes, and cucumber. Warm pitas in the oven last 2 min.
  6. Slice chicken into thin strips (like shawarma off the spit).
  7. Build bowls: greens base, sliced chicken, dollop of hummus, dollop of tzatziki, scattered tomatoes and cucumber.
  8. Serve pita halves on the side OR skip them and use big romaine leaves as wraps.
