๐ Cultural note
Mezze is the Levantine way of eating โ lots of small plates spread across the table so everyone grazes and talks. It's basically the original kids' lunchbox philosophy, just on a bigger scale. When dinner feels like too much, a mezze board is permission to keep things simple and still feed everyone well.
Why this recipe is T1D-friendly
- Hummus is naturally fiber-rich (chickpeas) which slows the carb absorption โ every kid's "spike" is different but this combo tends to be gentle
- The bowl makes carbs visible and stackable: cheese, feta, olives, and veg are basically free; pita is the one carb to count
Ingredients
- 1 cup hummus (store-bought or homemade) (24g total โ ~6g per serving)
- 2 mini cucumbers, sliced into spears (4g)
- 1 cup cherry tomatoes (6g)
- 1 red bell pepper, sliced (6g)
- 1 cup baby carrots (12g โ flag, ~3g per serving)
- ยฝ cup Kalamata or Castelvetrano olives (2g)
- ยฝ cup feta cheese, cubed (2g)
- 1 cup cheddar or mozzarella cubes (2g)
- ยผ cup pine nuts or sunflower seeds (4g)
- 2 small pitas, cut into wedges (~48g total โ 12g per ยฝ pita)
- 2 tbsp olive oil for drizzling (0g)
- Sprinkle of paprika or sumac (0g)
- Fresh parsley for garnish (0g)
Directions
- Spoon hummus into a wide shallow bowl or 4 individual plates and swirl it with the back of a spoon.
- Drizzle hummus with olive oil and dust with paprika or sumac.
- Arrange cucumber spears, cherry tomatoes, bell pepper, and baby carrots around the hummus.
- Scatter olives, feta cubes, and cheese cubes around the plate.
- Sprinkle pine nuts over the hummus.
- Tear or cut pita into wedges and arrange on one side (or skip entirely for low-carb).
- Garnish with fresh parsley.
- Serve family-style and let kids build their own bites โ pita dip, cucumber dip, cheese-and-olive combos.
Dash's kid tips ๐
- This is THE recipe for picky eaters โ Dash says when kids can pick and combine, they try things they'd refuse on a plain plate
- Pack leftovers in a bento box for school lunch (separate hummus into a little container so the veg stays crunchy)
- Add cubes of grilled chicken or leftover kafta to turn this from snack into full dinner
