  2. Lay the diced cucumber on a paper towel and lightly salt. Let sit 5 min, then pat dry (removes water so the dip doesn't get runny).
  3. In a medium bowl, whisk the Greek yogurt until smooth.
  4. Stir in cucumber, grated garlic, fresh dill, fresh mint, dried mint, olive oil, lemon juice, salt, and pepper.
