Kibbeh is sometimes called the national dish of Lebanon โ traditionally, it's a labor-of-love football-shaped shell of bulgur and meat, deep-fried, requiring serious grandmother skill. This flattened patty version is the weeknight cheat code: same flavors, same bulgur-meat magic, no shaping anxiety. It tastes like Sunday dinner in 35 minutes.

Ingredients
- 1.25 lbs ground lamb (or 85/15 ground beef) (0g)
- โ cup fine bulgur (#1 grade) (32g โ ~8g per serving) โ OR โ cup almond flour (4g total)
- 1 small yellow onion, finely grated (4g)
- 3 cloves garlic, minced (2g)
- 2 tsp ground allspice (1g)
- 1 tsp ground cumin (0g)
- 1 tsp ground cinnamon (0g)
- ยฝ tsp ground nutmeg (0g)
- ยฝ tsp Aleppo pepper or paprika (0g)
- 2 tbsp fresh mint, finely chopped (0g)
- 2 tbsp fresh parsley, finely chopped (0g)
- ยผ cup pine nuts, lightly toasted (4g)
- 1 tsp salt
- ยฝ tsp black pepper
- 2 tbsp olive oil for cooking (0g)
- Lemon wedges + plain yogurt for serving (2g per 2 tbsp yogurt)
Directions
- If using bulgur: rinse in cold water, soak in โ cup cold water for 15 min, drain and squeeze very dry. (Almond flour: skip this step.)
- Grate the onion over a strainer and press out as much liquid as possible.
- In a big bowl, combine ground meat, prepared bulgur or almond flour, grated onion, garlic, allspice, cumin, cinnamon, nutmeg, Aleppo pepper, mint, parsley, salt, and pepper.
- Mix with your hands until well combined โ for kibbeh texture, work it for a full minute (helps it bind without an egg).
- Fold in toasted pine nuts gently.
- Chill 10 min to firm up.
- Divide into 12 equal portions, shape into oval flat patties about ยฝ inch thick.
- Heat olive oil in a large skillet over medium-high. Cook patties in batches, 3-4 min per side, until deeply browned and cooked through (160ยฐF internal).
- Rest 2 min. Squeeze lemon over the top and serve with yogurt for dipping.
