### Beans first (or start them while the rice cooks):

  1. Start with sofrito โ€” warm olive oil in a heavy pot or caldero over medium heat. Add 2-3 tablespoons of sofrito and sautรฉ 1-2 minutes until fragrant.
  2. Build the sauce โ€” stir in tomato sauce, Sazรณn, bay leaves, and oregano. Cook 2 minutes.
  3. Add the beans โ€” pour in the beans with their liquid, plus the potato, calabaza if using, and broth.
  4. Simmer โ€” bring to a gentle boil, then lower heat and simmer uncovered 25-30 minutes (or 1 hour for soaked dry beans) until the potato is tender and the sauce has thickened to a ladle-able consistency.
  5. Taste and adjust โ€” salt, pepper, maybe another splash of broth if it's too thick.
