This is THE daily plate. The one you grew up eating after school, the one that means "you're home." A mound of fluffy white arroz on one side, a ladleful of saucy habichuelas rosadas poured over the top, a piece of meat or a fried egg on the side. Every Puerto Rican mom keeps a pot of rice on the stove and a pot of beans in the fridge. We don't measure out a sad ยผ cup of rice for the kid โ we cook the family pot the way mami cooks it, and the kid's portion gets scooped from the same caldero as everyone else's.

### Beans first (or start them while the rice cooks):
- Start with sofrito โ warm olive oil in a heavy pot or caldero over medium heat. Add 2-3 tablespoons of sofrito and sautรฉ 1-2 minutes until fragrant.
- Build the sauce โ stir in tomato sauce, Sazรณn, bay leaves, and oregano. Cook 2 minutes.
- Add the beans โ pour in the beans with their liquid, plus the potato, calabaza if using, and broth.
- Simmer โ bring to a gentle boil, then lower heat and simmer uncovered 25-30 minutes (or 1 hour for soaked dry beans) until the potato is tender and the sauce has thickened to a ladle-able consistency.
- Taste and adjust โ salt, pepper, maybe another splash of broth if it's too thick.
