  1. Start with sofrito โ€” warm achiote oil in a caldero (heavy-bottomed pot) over medium heat. Add 2-3 tablespoons of sofrito and sautรฉ 1-2 minutes until fragrant โ€” this is the base of the whole dish. (Add diced ham now if using and brown for 2 more minutes.)
  2. Build the pot โ€” stir in tomato sauce, bay leaves, oregano, olives, and gandules. Simmer 3 minutes so the flavors marry.
  3. Add the rice โ€” pour in the rice and salt, stir once to coat in the sofrito mixture.
  4. Add the liquid โ€” pour in chicken broth, stir once more, and bring to a boil.
  5. Cover and cook โ€” reduce heat to lowest setting, cover tightly, and cook 20-25 minutes WITHOUT lifting the lid.
  6. Pegao โ€” for the crispy bottom layer (the most-fought-over piece), turn heat to medium-high for the last 2-3 minutes.
  7. Rest โ€” turn off heat, leave covered 5 minutes, then fluff gently with a fork.
