๐ Cultural note
Bistec encebollado is the dish that smells like Saturday afternoon. Thin steak smothered in tender, sweet onions in a garlicky sauce โ it's one of those plates where the onions are almost more important than the meat. Served with rice and beans, this was probably on the menu at every Puerto Rican mom's table at least twice a month.

Ingredients
- 1.5 lbs thin-sliced beef (cubed steak, top round, or sirloin), about 1/4 inch thick (~0g carbs)
- 2 large yellow onions, sliced thin (~28g carbs / ~7g per serving)
- 5 cloves garlic, minced (~2g carbs)
- 1 tsp adobo
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 2 tbsp white vinegar
- 2 tbsp olive oil
- 1/2 cup beef broth (~1g carbs)
- 1 packet Sazรณn con culantro y achiote (~1g carbs)
- 1 bay leaf
- Salt to taste
Directions
- Season the beef with adobo, oregano, pepper, garlic, and vinegar. Let marinate 30 minutes in the fridge.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Sear the beef quickly โ about 1 minute per side. Don't overcook. Remove to a plate.
- Lower heat to medium. Add remaining 1 tbsp olive oil and the sliced onions.
- Cook onions, stirring often, for 10-12 minutes until soft, golden, and starting to caramelize.
- Stir in Sazรณn and bay leaf. Pour in beef broth and scrape up the brown bits.
- Return beef and any juices to the pan. Simmer covered on low for 10 minutes โ the meat should be tender and the sauce should reduce slightly.
- Taste and adjust salt. Remove bay leaf.
