Chuleta frita is the weeknight hero โ crispy on the outside, juicy inside, seasoned to within an inch of its life with adobo and garlic. Abuela serves it with white rice, beans, and maybe a couple of tostones. We're keeping the chuleta exactly as it should be and portioning the sides so kids can eat the dish they love without the carb roller coaster.

Ingredients
- 4 bone-in pork chops, about 3/4 inch thick (~0g carbs)
- 3 cloves garlic, minced (~1g carbs)
- 1 tsp dried oregano
- 1 tsp adobo seasoning
- 1/2 tsp black pepper
- 1 tbsp white vinegar
- 1 tbsp olive oil (for marinade)
- 3 tbsp olive oil (for frying)
- 1.5 cups cooked rice (โ cup per serving) (~75g total / ~15g per serving with real basmati)
- Lime wedges
- Salt to taste
Directions
- In a bowl, mash garlic, oregano, adobo, pepper, vinegar, and 1 tbsp olive oil into a paste.
- Rub the paste all over the pork chops. Let marinate 30 minutes (or up to overnight in the fridge).
- Rice: Cook your rice of choice while the chops marinate (see "Rice & base options" below).
- Pork chops: Heat 3 tbsp olive oil in a heavy skillet over medium-high heat.
- When the oil shimmers, add chops (don't crowd the pan โ work in batches if needed).
- Fry 4-5 minutes per side until deeply golden and internal temp hits 145ยฐF.
- Let rest 3 minutes before serving with a โ cup scoop of rice and a wedge of lime.
