๐ Cultural note
Friday-night fish fries are a foundation of Southern Black community life โ church basements, backyard gatherings, family reunions. Catfish dredged in cornmeal and fried golden is the dish. We're keeping the cornmeal in the crust because you can't have a cornmeal-crusted catfish without cornmeal โ we're just cutting it with almond flour to bring the carbs down, and pan-searing or air-frying so our T1D babies get the real bite without the deep-fryer.
Why this recipe is T1D-friendly
- Almond flour + cornmeal blend (2:1 ratio) cuts the carb load in half while keeping the unmistakable Southern crunch
- Catfish (or tilapia) is protein-dense and zero-carb on its own
- Pan-sear or air-fry method skips the deep-fryer carb spike from oil absorption
- Pairs naturally with low-carb sides like collards or a vinegary slaw
Ingredients
- 4 catfish or tilapia fillets, 5-6 oz each (0g)
- 1 cup buttermilk (12g across batch / 3g per serving)
- 1 tbsp hot sauce (Crystal or Frank's) (1g)
- 1 tsp kosher salt (0g)
- 2/3 cup almond flour (10g across batch / 2.5g per serving)
- 1/3 cup fine yellow cornmeal (24g across batch / 6g per serving โ but only some sticks)
- 1 tsp smoked paprika (1g)
- 1 tsp garlic powder (1g)
- 1 tsp onion powder (1g)
- 1/2 tsp cayenne (kid-mild) (0g)
- 1/2 tsp black pepper (0g)
- 2 tbsp avocado oil for the pan (or oil spray for air fryer) (0g)
- Lemon wedges to serve (1g)
- Fresh parsley to garnish (0g)
Directions
- Soak fillets in buttermilk + hot sauce + 1/2 tsp salt for 15-30 min. This removes any muddiness and tenderizes.
- In a wide bowl, whisk almond flour, cornmeal, paprika, garlic powder, onion powder, cayenne, pepper, remaining salt.
- Lift fillets out of buttermilk one at a time, let excess drip off.
- Press into the cornmeal mixture, coating both sides. Pat firmly so it sticks.
- Pan-sear method: Heat avocado oil in a heavy skillet (cast iron is ideal) over medium-high until shimmering. Cook fillets 3-4 min per side until deep golden and the fish flakes easily. Don't crowd the pan โ work in 2 batches if needed.
- Air-fryer method: Spray fillets with avocado oil. Air-fry at 400ยฐF for 8-10 min, flipping halfway, until crust is deep golden.
- Transfer to a paper-towel-lined plate for 1 minute to absorb any extra oil.
- Squeeze lemon over the top right before serving โ wakes up everything.
- Garnish with parsley. Serve hot โ the crust softens as it sits.
- Pair with collard greens and a small portion of black-eyed peas, or a vinegar slaw.
Dash's kid tips ๐
- Catfish has a mild, sweet flavor kids accept easily โ tilapia is even milder if your kiddo is a cautious eater
- Let your kiddo press the fillets into the cornmeal coating โ it's the satisfying kid kitchen job
- A squeeze of lemon at the end is a small thing kids love to "be in charge of" at the table
