Friday-night fish fries are a foundation of Southern Black community life โ€” church basements, backyard gatherings, family reunions. Catfish dredged in cornmeal and fried golden is the dish. We're keeping the cornmeal in the crust because you can't have a cornmeal-crusted catfish without cornmeal โ€” we're just cutting it with almond flour to bring the carbs down, and pan-searing or air-frying so our T1D babies get the real bite without the deep-fryer.

  1. Soak fillets in buttermilk + hot sauce + 1/2 tsp salt for 15-30 min. This removes any muddiness and tenderizes.
  2. In a wide bowl, whisk almond flour, cornmeal, paprika, garlic powder, onion powder, cayenne, pepper, remaining salt.
  3. Lift fillets out of buttermilk one at a time, let excess drip off.
  4. Press into the cornmeal mixture, coating both sides. Pat firmly so it sticks.
  5. Pan-sear method: Heat avocado oil in a heavy skillet (cast iron is ideal) over medium-high until shimmering. Cook fillets 3-4 min per side until deep golden and the fish flakes easily. Don't crowd the pan โ€” work in 2 batches if needed.
  6. Air-fryer method: Spray fillets with avocado oil. Air-fry at 400ยฐF for 8-10 min, flipping halfway, until crust is deep golden.
  7. Transfer to a paper-towel-lined plate for 1 minute to absorb any extra oil.
  8. Squeeze lemon over the top right before serving โ€” wakes up everything.
  9. Garnish with parsley. Serve hot โ€” the crust softens as it sits.
  10. Pair with collard greens and a small portion of black-eyed peas, or a vinegar slaw.
