  1. If using dried peas, soak overnight in plenty of cold water. Drain and rinse.
  2. In a heavy pot, heat oil over medium. If using bacon, render it first for 5 min, then proceed. If using turkey, just add oil.
  3. Add onion, bell pepper, celery โ€” the Southern trinity. Cook 8 min until soft.
  4. Add garlic, paprika, thyme, cayenne โ€” stir 30 seconds until fragrant.
  5. Add the peas, smoked turkey, bay leaf, and chicken broth. Bring to a boil.
  6. Dried peas: reduce to a simmer, cover loosely, cook 50-60 min until peas are tender but still hold shape. Canned peas: simmer 20 min just to marry the flavors.
  7. Lift out the turkey wing, shred the meat, return to pot. Discard bay leaf.
  8. Stir in apple cider vinegar โ€” this brightens everything. Taste, add salt.
  9. Cook your rice separately (don't combine โ€” lets the family portion the rice for each plate).
  10. Build each plate at the table: rice first, peas ladled on top, scallions/parsley/hot sauce on top of that.
