This isn't a "diet version." This is the same buttermilk-soaked, crispy-crusted, juicy-inside chicken that built our families โ smartly portioned and oven-finished so our T1D babies can have a real plate of Sunday chicken without a deep-fryer carb spike.

Ingredients
- 3 lb bone-in chicken pieces (drumsticks, thighs, wings) (0g)

- 1 1/2 cups almond flour (24g across batch / 4g per serving)
- 1/2 cup grated parmesan (helps it brown) (2g)
- 2 tsp smoked paprika (1g)
- 1 tsp garlic powder (1g)
- 1 tsp onion powder (1g)
- 1 tsp black pepper (0g)
- 1/2 tsp cayenne (kid-mild โ bump to 1 tsp for adults) (0g)
- 2 large eggs, beaten (1g)
- 3 tbsp avocado oil for drizzling (0g)
Directions
- Marinate (do this the night before or 4+ hours ahead): Whisk buttermilk, hot sauce, and 1 tbsp salt in a big bowl. Add chicken, submerge, cover, refrigerate at least 4 hours โ overnight is better. This is where the tenderness lives.
- Preheat oven to 425ยฐF (or air fryer to 400ยฐF). Line a sheet pan with parchment and set a wire rack on top.
- In a wide shallow bowl, whisk almond flour, parmesan, paprika, garlic powder, onion powder, pepper, and cayenne.
- In a second bowl, beat the eggs.
- Lift chicken out of buttermilk one piece at a time, let excess drip off (don't rinse โ the buttermilk is the glue).
- Dip in egg, then dredge in the almond-flour mix, pressing the coating on firmly. Place on the wire rack.
- Drizzle each piece lightly with avocado oil โ this is what makes it crisp without frying.
- Oven: Bake 35-40 min, flipping at 25 min, until internal temp hits 175ยฐF for thighs/drumsticks. Air fryer: 22-25 min, flipping at 15 min.
- Rest 5 min before serving โ keeps it juicy.
- Serve with collard greens or a small portion of black-eyed peas.
