Ingredients
- 6 bone-in pork chops, ยพ-inch thick
- 1ยฝ tsp kosher salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- ยฝ tsp garlic powder
- 2 tbsp avocado oil
- 2 large yellow onions, sliced thin
- 3 cloves garlic, minced
- 1 tbsp all-purpose flour
- 2ยฝ cups chicken broth (low-sodium)
- 1 tsp Worcestershire sauce
- 1 sprig fresh thyme (or ยฝ tsp dried)
- 2 tbsp butter
- Fresh parsley to garnish
- Mashed potato or cauli mash cooked separately (each plate gets its own scoop)
Directions
- Pat pork chops bone-dry โ wet meat won't sear. Season both sides with salt, pepper, paprika, garlic powder.
- Heat avocado oil in a heavy skillet (cast iron is perfect) over medium-high until shimmering.
- Sear chops 3-4 min per side until deep golden brown. Transfer to a plate (they'll finish in the gravy).
- Drop heat to medium. Add onions to the same skillet with a pinch of salt. Cook 10-12 min, stirring often, until deep golden and jammy. Don't rush this โ this is where the soul of the dish lives.
- Add garlic, cook 30 seconds.
- Sprinkle the 1 tbsp flour over the onions, stir constantly for 1 minute (cooks the raw flour taste out).
- Slowly pour in chicken broth, whisking. Add Worcestershire and thyme. Bring to a gentle simmer โ it'll thicken in about 3 min.
- Nestle pork chops back into the gravy (any resting juices too). Cover, reduce to low, simmer 15 min until chops are fork-tender (internal 145ยฐF).
