Directions

  1. Rinse sticky rice 3-4 times until water runs clear. Soak in water 4 hours or overnight (this is non-negotiable for proper texture).
  2. Drain rice. Line a steamer basket with cheesecloth or a clean kitchen towel.
  3. Spread rice in the steamer. Steam over boiling water for 20-25 min until translucent and tender. (No rice cooker hack โ€” steaming is the only way to get the right chewy texture.)
  4. While rice steams, make the coconut sauce: combine coconut milk, allulose, and salt in a small saucepan.
  5. Heat over medium-low, stirring, until allulose dissolves and sauce is hot but NOT boiling, about 3 min. Remove from heat.
  6. When rice is done, transfer to a bowl. Pour 3/4 of the warm coconut sauce over it.
  7. Stir gently, cover, and let sit 15 minutes so rice absorbs the sauce. It will look glossy and rich.
  8. Peel mangoes and slice into thin cheeks or long strips.
  9. To plate: scoop a portion of sticky rice onto each plate. Arrange mango slices alongside.
  10. Drizzle with the reserved coconut sauce and sprinkle with toasted sesame seeds.
